Kirstin: Today I wanted to bring to as many peoples’ attention a challenge that a good friend of mine, Sarah Stockdale has been participating in this week. From 29th April – 3rd May, Sarah has been living on just £1 a day for all of her food and drink as part of the Live Below the Line challenge.
Sarah has proven to be a truly inspirational individual, not that I needed this challenge to convince me of this, and it has been interesting to learn through Sarah how important food/diet is to our energy levels. Porridge and lentils have been Sarah’ s secret food weapons this week, and her beverage of choice has been hot water. One more day to go Sarah, you little superstar, and you can then enjoy a well deserved celebratory meal at the weekend.

This challenge is helping to raise money and awareness for crucial anti-poverty initiatives. £1 is the UK equivalent of the extreme poverty line. Living on so little will give us a glimpse into the challenges faced by the 1.4 billion people who have no choice but to live below the line every day – for everything – food, medical care, transport, education, everything.
